Ingredients - 375 g all-purpose flour
- 3 g baking soda
(about one teaspoon) - 5 g salt (about one teaspoon)
- 250 g unsalted butter, very soft
- 480 g brown sugar/ "cassonade" (in the USA this is a soft brown sugar that is not found in France)
- 20 ml vanilla extract
(2 tablespoons) - 10 ml water (1 tablespoon)
- 2 eggs
- 225g chocolate chips
| Preparation - Preheat the oven to 165 degrees C (325 degrees F). Grease cookie sheets or line with parchment paper.
- In a bowl, sift together the flour, baking soda and salt; set aside.
- In a different bowl, cream together the softened butter and sugar until well blended. Beat in the vanilla, water and eggs until light and creamy.
- Mix in the dry ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon.
- Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
- Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
